Nana's Amador Harvest Inn Artichoke Frittata
Recipe

Ingredients:

Nonstick cooking spray
1 cup thick and chunky salsa
1 can (14 ounces) artichoke hearts, drained and chopped 
1/3 cup grated Parmesan cheese
1-1/2 cups shredded Monterey Jack cheese
1-1/2 cups shredded sharp Cheddar cheese
12 eggs
1 cup sour cream

Preparation:

Preheat oven to 350 degrees

Spray 13x9 glass baking dish with nonstick cooking spray. Spread salsa evenly in bottom of dish; sprinkle with artichokes and cheeses. In medium bowl, beat eggs and sour cream. Pour egg mixture over artichokes and cheese. Bake 30 to 40 minutes or until set and slightly brown. Cut into serving pieces.
