Ingredients: Method: In a large skillet brown bacon cubes for about 6 minutes over medium heat. Add onion, garlic, oregano, salt and pepper flakes. Cook until tender, about five minutes. Stir in spinach, cover and cook for 2-3 minutes or until slightly wilted. Mix in cider vinegar and season with salt and pepper. Serve immediately with Crusty Cajun Chicken, oven roasted sweet potato fries and sliced tomatoes. Serves 4 Tested and contributed by Kristi Santens
