Braised Greens

Serve with Crusty Cajun Chicken, Oven Roasted Sweet Potato Fries

Every now and then we crave a meal with just a bit of extra snappiness. Our Crusty Cajun Chicken served with Oven Roasted Sweet Potato Fries and Braised Greens is just such a meal. Enjoy it with good friends and a bottle of Deaver Vineyards Barbera.

Ingredients:

3 bacon slices, cubed
1 small red onion, sliced
2 cloves garlic, finely chopped
1 teaspoon dried oregano
1 teaspoon kosher salt
Pinch red pepper flakes
8 cups fresh spinach
2 tablespoons cider vinegar
Fresh ground pepper and kosher salt

Method:

In a large skillet brown bacon cubes for about 6 minutes over medium heat. Add onion, garlic, oregano, salt and pepper flakes. Cook until tender, about five minutes. Stir in spinach, cover and cook for 2-3 minutes or until slightly wilted. Mix in cider vinegar and season with salt and pepper.

Serve immediately with Crusty Cajun Chicken, oven roasted sweet potato fries and sliced tomatoes.
